- Once-frozen/land-frozen (from Domestic U.S., Canada, Iceland, Russia, Norway and Alaska)- Seafood that is chilled on ice at sea in a vessel's hold and then processed, frozen, and packaged upon return from each trip out to sea.
- Twice-frozen (Includes International origins such as China, Taiwan, Indonesia, South America, and Canada.) Frozen on board a fishing vessel and placed in freezer holds to preserve freshness while awaiting delivery to another (long distance) destination for further processing. This seafood is then re-frozen after it is delivered and processed. The most common method used by mass production facilities in international locations such as China and the South Pacific/Pacific Rim.
